Have your cake & eat it with my 1st Multipower recipe

Evening all!

So as some of you will know from my last post I am lucky enough to now be sponsored by Multipower. As part of this, I’ll be writing them a healthy recipe every month incorporating protein… and here, I’m proud to present no.1 !

We’re constantly being told we can’t have our cake and eat it, right? 

WRONG. 

Health and fitness is a journey we should enjoy, so what better excuse to dig our your blender than a sweet treat recipe packed with good stuff? (Yup, even one of your five a day).

These delicious banana protein cupcakes with dark chocolate chips are perfect for a pre or post workout snack, and take all of 25-30 minutes to make. So what are you waiting for? Get weighing, baking and (the best part) eating!

Ingredients (makes 3/4 cupcakes): 

1 x large ripe banana

2 x tbsp coconut flour

1/2 tbsp baking powder

1/2 scoop of Multipower french vanilla protein

3 x tsp peanut butter

1 x tsp coconut oil

1 x whole egg

Handful of dark chocolate chips for baking

Method (25 minutes – 5 minutes prep and 20 minutes bake time):

Mix all the ingredients except the dark chocolate chips in a blender until they form a smooth batter. Then add in the dark chocolate chips and pour evenly into cupcake cases in a baking tray. 

Bake at 170 degrees for 20/30 minutes until the mixture has risen and is golden.

Then leave to cool, and enjoy!

Top tip: If a cupcake isn’t enough to keep you satisfied, pour the mixture into a deeper set muffin tray for a quick, easy breakfast on the go!
