Hi everyone!
So I’m back for my second protein recipe post with a concoction which I’m sure will have your mouth watering in anticipation.
This month I’ve done a protein take on sweet potato brownies – a way to pack in that chocolate hit but with complex carbohydrates and zero added sugar.
Though this may sound too good to be true, you’ll learn over time that I can, and will show you ways to make delicious snacks that aren’t bad for your waistline either.
So sit back, read on, and follow the recipe below for some seriously gooey, tasty treats.
Sweet Potato Protein Brownies
Ingredients (makes 12 brownie squares):
400g sweet potatoes (1.5-2 medium sized potatoes)
200g pitted dates
100g ground almonds
60g Multipower 100% Whey Protein powder (2 scoops)
4 eggs
5 tbsp cocoa powder
1 tbsp peanut butter
1 tsp baking powder
Optional: 2 tbsp dark chocolate chips or 1 tbsp sweetener for a sweeter flavour
Method (35 minutes – 5 minutes prep, 30 minutes bake time)
Put the sweet potatoes in a pan of boiling water and bring to boil for 10-15 minutes over a medium heat.
Once then are really soft, take them out, skin them and put them in a blender alongside all the other ingredients. The mixture should have a nice, gooey consistency to it.
To finish, grease a baking tray and pour in, cooking them at 190 degrees for around 25-30 minutes ensuring that the centre is cooked through. Allow to cool and enjoy!
